RIRI’S SUPERBOWL POTATO SKINS

Another food opener to Rhianna’s concert this upcoming Sunday is pairing wings with potatoes. There’s endless ways to create potatoes - mind are potato skins. Here I’ve created a slight twist to @flychefaldenb potato skins with my special mex mix.
INGREDIENTS
Russet Potatoes
Sour cream
Green onions
Bacon
Shredded monterey jack cheese mix
Fire Islander Seasoning Adobo
Fire Islander Seasoning Sofrito
Can of tomatoes and green chiles
Onion
Grapeseed Oil OR Avocado Oil
Poke holes into each of the potatoes with a fork
Preheat oven to 450 F degrees
Cook potatoes in the microwave until tender
Slice the potatoes in half and scope some of the center of the potatoes into a bowl.
Set these halves aside.
Slice the bacon into squares and cook in a pan. Once cooked, remove the bacon.
Add and mix Fire Islander Sofrito to the bacon fat pan.
Add chiles, diced onion and tomatoes to the bacon pan and mix.
Add to taste Fire Islander Adobo to the pan and mix again
Add bacon and scooped potato to the pan and mix.
In a separate pan, add oil and allow to rise to frying temperature.
Cut the potato halves into halves again creating little potato canoes.
Deep fry the canoes for a 3-4 minutes
Once fried, top the canoes with the bacon mix and shredded cheese
In a baking dish, put the canoes in the oven for 10 minutes
Take out and top the canoes with sour cream, more cheese and diced green onions
