RIRI’S SUPERBOWL WINGS

¡Bendición Familia!

Who’s ready for Rihanna’s concert this upcoming Sunday? Most of us have been waiting on the sidelines to see her, although it’s being interrupted by a small football game between the Kansas City Chiefs and Philadelphia Eagles. I am of the belief that Super Bowl food should be easy to fix up. But a requirement for me are wings, wings and more wings! 


I don't want to spend time cooking, I want to spend time eating. Let me get you a quick and easy wing marinade that combines hot and sweet that you make ahead of time or same day. Before reading on, you should know I am off the people group that cleans chicken before cooking. Look at my Instagram reels to see how I clean my chicken.


INGREDIENTS:


Wings (I enjoy the drumette, the flat, and wing tip combined - it’s more filling)

Extra Virgin Olive Oil (EVOO)

Apricot Sun Food Bar Zaatar Hot Spread   @apricotsunfoodbar

Honey

Fire Islander Seasonings Adobo

Lemon

White Vinegar OR Apple Cider Vinegar - 4 Tbsp

Cooking spray



  • Defrost wings in the fridge and bring to room temperature before seasoning.

  • Preheat the oven to 450 F degrees.

  • Spray a baking pan with cooking spray.

  • If you want to clean your chicken, with gloves add your chicken into a stainless steel bowl.

  • Run the chicken under cold or tepid water, massaging and rinsing the chicken.

  • Drain the water from the bowl. Add the vinegar and the juice from half of the lemon on the chicken.

  • Massage the chicken again and rinse with cold or tepid water.   

  • In a mixing bowl, whisk equal parts of the Zaatar Hot Spread and Fire Islander Adobo. and EVOO and honey to make a runny paste. Taste the mix to determine the preferred sweetness to heat ratio.

  • Separate some of this mix for brush on the wings after baking.

  • Add wings to mix and massage the seasoning to coat the chicken.

  • Add any additional ingredient to ensure the mix covers the chicken event.

  • Pour the chicken into the baking pan and spread evenly. 

  • Place the baking dish in the oven and cook for 40 minutes.

  • Remove the baked wings from the oven and let cool for about 10 minutes.

  • Brush more of the Zaatar and honey mix on the chicken.

  • Squeeze some lemon on the wings
