Our Favorite Comfort Food
Bendición familia. I bring you one of my favorite comfort foods. Tostones made from plantains. You might ask, what’s a plantain? A plantain is a cross between a banana and a potato. Now a days you can find green plantains in the banana section of most grocery stores. I encourage you to buy them from your local latin grocery store. Make sure they are solid green. Pre-heat cooking oil to medium-high heat. I personally prefer avocado oil or grapeseed oil. They both have high cooking points and are much healthier. Here I peel and cut them diagonally for a quick flash fry. Make sure to not over cook them. I would say no more than 3-4 minutes for a flash fry. Then I smash them flat and flash fry them again for about 4-5 minutes. Make sure to not walk away.
Once they’re crispy, I remove them and sprinkle extra virgin olive oil, my Fire Islander Adobo multi-purpose seasoned salt blend. With a dash of dried oregano over the tostones, there you have it!
I put this aside and move on to make a special dip called mayo-ketchup. None of this store bought stuff. This is Criollo (meaning authentically Puerto Rican) and flavorful. I add equal parts ketchup and mayo of whatever amount my ancestors summon me to min a bowl. I sprinkle more of that special Fire Islander Adobo blend. A quick mix with freshly grated garlic, a dash of dried oregano and you're ready to dip and eat. Add any additional ingredient to create the perfect mix blend of this magical dipping sauce most pleasant to your taste buds.
